Quick and Easy Chickpea Salad

Ingredients

  • 2 cans chickpeas
  • 1 cup chopped red cabbage
  • 1 cup quartered cherry tomatoes
  • 1/2 cup crumbled feta
  • 1/2 cup chopped red onion
  • 1 chopped English cucumber
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon salt
  • 1 tablespoon ground pepper

Instructions

  1. Rinse and drain chickpeas.
  2. In a bowl, combine chickpeas with all the ingredients and mix well.
  3. Best made in advance!
